CLEANSING ARTICHOKES: The artichoke is an excellent vegetable, versatile and with a strong character.
A true ally in the kitchen.
Its cleaning, however, can be difficult, let’s see together the main steps to facilitate this operation and fully enjoy its goodness.
First, rub your hands with a lemon, this will help you not to get dirty while handling the artichoke.
Alternatively, you can conveniently use gloves.
Now you are ready to start with the cleaning: first remove the hardest and thorniest part, the tip.
Cut off approximately 1-2 cm of it.
Then proceed by removing the outermost and hardest leaves; go on until you reach the most tender ones.
Carefully remove any thorns and also the end of the stem, which would be too hard to eat.
With these “scraps,” we are going to prepare a broth with which to cream our pasta.
Now remove the outer layer of the stem with a paring knife.
The last step involves removing the down – beard – of the artichoke: divide the artichoke in half and remove the down with a knife.
Cut into a julienne and the artichoke is ready to be cooked! PREPARATION: Take a large frying pan, add evo oil and the finely chopped half onion.
Let it brown for a few seconds and add the capers, which you have carefully desalted and dried.
Then add the julienned artichokes let them cook for about 15 minutes over moderate heat.
If they get too dry while cooking, use the previously prepared broth and sprinkle them occasionally.
Once the artichokes are cooked add the well-drained natural tuna and continue cooking over low heat for a few minutes.
Probably having used capers it will not be necessary to salt further, check by tasting the sauce.
Meanwhile, bring water to a boil in a large pot, salt and pour in the Antica Madia Hearts.
Let cook for 6 to 7 minutes.
Drain the pasta and gently pour it into the pan.
Finish cooking by adding a little evo oil and tossing from the bottom up gently.
Plate and serve.
If desired, add a sprinkling of Parmesan cheese.
