Colored pasta is too often associated with artificiality. In our case it is nothing more than the modern interpretation of an ancient ritual.
The idea comes from Ivo and his vivid memory of grandmother Emilia, of pasta flavored with country herbs: a bunch of nettles, a few sage leaves, the sprig of rosemary, and in an instant the dough would take on a different flavor, but also a different color.
